Ingredients:

- 6 large eggs
- 1/4 cup milk (or unsweetened almond milk)
- 1/2 cup chopped asparagus
- 1/2 cup cherry tomatoes, halved
- 1/4 cup chopped spinach or kale
- 1/4 cup chopped onion
- 1/4 cup shredded cheese (optional – low-fat mozzarella or feta work well)
- Salt and pepper to taste
- 1 tbsp olive oil

Directions:

1. Preheat the oven to 375°F (190°C).
2. In a skillet, heat olive oil and sauté onions and asparagus for 3–4 minutes until tender.
3. Add spinach and tomatoes, cook another minute until just wilted.
4. In a bowl, whisk together eggs, milk, salt, and pepper. Stir in the cheese if using.
5. Pour the egg mixture into the skillet over the veggies.
6. Cook for 1–2 minutes on the stove, then transfer to the oven.
7. Bake for 12–15 minutes or until the center is set and the top is lightly golden.
