Spring has officially arrived at Melody Living Independent Living in Lake in the Hills, and with it comes the perfect excuse to revitalize your daily routine. As the sun shines brighter and flowers begin to bloom, our community blossoms with new wellness activities, outdoor gatherings, and flavors that celebrate the season of renewal.

And what better way to welcome spring than with a light, vibrant treat that’s as nourishing as it is delicious? Today, we’re sharing a refreshing Spring Citrus & Mint Parfait that’s easy to make and even more fun to share—whether with friends, neighbors, or loved ones.

This parfait is an ideal pick-me-up for breakfast, a healthy afternoon snack, or even a light dessert. It features zesty citrus, cooling mint, and creamy Greek yogurt, layered for flavor, texture, and beauty. Best of all? It’s simple enough for everyone to enjoy making it together.

Ingredients:

- 1 cup plain or vanilla Greek yogurt
- ½ grapefruit, peeled and sliced
- ½ orange, peeled and sectioned
- ¼ cup pomegranate seeds
- 1 tablespoon fresh mint, chopped
- ¼ cup granola
- Drizzle of honey (optional)

Directions:

1. In a glass or bowl, start by spooning in half the yogurt.
2. Add a layer of citrus fruit and sprinkle in the pomegranate seeds.
3. Top with chopped mint and a touch of granola for crunch.
4. Repeat the layers and finish with a drizzle of honey and a mint leaf for garnish.
5. Enjoy right away or refrigerate for 10 minutes for an extra-refreshing experience.

Enjoy immediately or chill for 10 minutes to let the flavors meld. This dish is easily customizable, too. Not a fan of grapefruit? Swap it with strawberries or kiwi. Looking for a dairy-free version? Try coconut or almond-based yogurt. There’s a variation for every taste and dietary need.

This parfait is not only delicious—it’s packed with nutrients that support immune function, digestion, and overall vitality. Greek yogurt provides protein and probiotics for gut health, citrus adds a hefty dose of vitamin C, and mint can soothe digestion and add a refreshing twist. Pomegranate seeds bring a burst of antioxidants that support heart health.

At Melody Living, meals are more than just nourishment—they’re opportunities to connect, create, and enjoy the moment. Cooking and sharing recipes like this one encourage community building and personal expression.
