And what better way to welcome spring than with a light, vibrant treat that’s as nourishing as it is delicious? Today, we’re sharing a refreshing Spring Citrus & Mint Parfait that’s easy to make and even more fun to share—whether with friends, neighbors, or loved ones.
This parfait is an ideal pick-me-up for breakfast, a healthy afternoon snack, or even a light dessert. It features zesty citrus, cooling mint, and creamy Greek yogurt, layered for flavor, texture, and beauty. Best of all? It’s simple enough for everyone to enjoy making it together.
Ingredients:
- 1 cup plain or vanilla Greek yogurt
- ½ grapefruit, peeled and sliced
- ½ orange, peeled and sectioned
- ¼ cup pomegranate seeds
- 1 tablespoon fresh mint, chopped
- ¼ cup granola
- Drizzle of honey (optional)
Directions:
1. In a glass or bowl, start by spooning in half the yogurt.
2. Add a layer of citrus fruit and sprinkle in the pomegranate seeds.
3. Top with chopped mint and a touch of granola for crunch.
4. Repeat the layers and finish with a drizzle of honey and a mint leaf for garnish.
